Anyone who knows me knows I am not the chef in our family. But, I’m also a big believer in equal division of labor in the house. So when I cook, I need the meals I make to be simple and tasty. Here is a recipe that doesn’t require much time or ingredients. It’s healthy and all 3 of our kids will eat without complaint–winner!

(Happy camper with a full mouth! If you have hard to please little ones you might try topping with shredded cheese)
Ingredients:
2 cans beans-drained (cannellini, garbanzo and black beans are our family favorites)
1 clove garlic-minced
1 medium onion-diced
1 zucchini (green or yellow)-diced
1 bunch Rainbow chard (you could use kale, spinach, mustard greens, etc.)-finely chopped (and use the stems of the chard!)
2 Tablespoons olive oil
Salt and pepper to taste

Directions:
Heat olive oil in skillet. Cook garlic and onions until transparent. Add other ingredients and cook with lid until greens are wilted and zucchini soft. I added 1/4 cup of water for extra moisture during cooking. Serve and enjoy!!

This meal fed the 5 of us and the picture above is what we enjoyed for leftovers as a side with turkey burgers the next day.
